If you were to ask me a year ago if I liked avocados, I would’ve swiftly said oh no no no! I was no fan of the green exterior and mushy interior – no thank you! But, at my good friend’s house one day this Spring, I took the plunge. I tried avocados. Mixed along with some other ingredients in a guacamole I took a bit sure I would dislike it. Sure it would make my stomach turn. I was more than pleasantly surprised!
It was delicious! I couldn’t stop eating it, it was so good! This guac was on point with lemon juice and red and green peppers; I had no idea what I was missing out on and make guac for my daughter and I often. I had no idea something some simple to make could be so yummy! We also cut up ripe avocados for a side dish! Love!

I’m not the best at following recipes, but for a yummy guac I dice red and green peppers, mash up some avocado, mix in olive oil and lemon juice and magic happens! There are great texture components with the added peppers which is the perfect complement to the avocadoes!
I had no idea how versatile avocadoes could be, and I’m having a great time making new recipes!
